The José Andrés Experience: minibar & Jaleo

As self-proclaimed foodies, dining at minibar by José Andrés had been on our bucket list for quite some time. This two-Michelin-star experience is known for pushing the boundaries of modern gastronomy, so we knew we were in for something special. We opted for the tasting menu at $395 per person, while the other options included a curated wine pairing for an additional cost.

From the moment we arrived, it was clear this wasn't going to be an ordinary dinner. Before being seated at the chef's counter, we were welcomed next door with a beautifully crafted cocktail and a delicious amuse-bouche. The intimate and eclectic atmosphere immediately set the tone for the evening and built anticipation for what was to come.

Once seated, we watched the chefs work with incredible focus and precision, transforming familiar ingredients into imaginative, artfully plated creations. Every course felt like a performance, with each dish introducing a new technique, texture, or surprise. The evening featured 23 courses, including pigeon (squab)!

Rather than focusing on one standout dish, what made minibar unforgettable was the experience as a whole. Every bite showcased extraordinary craftsmanship, creativity, and attention to detail. Traditional ingredients and classic flavor combinations were deconstructed, reimagined, and presented in ways we never expected, making each course as visually stunning as it was delicious.

Dining at minibar is more than just a meal, it's a fully immersive sensory adventure. If you appreciate innovative cuisine and are looking for a truly one-of-a-kind dining experience, minibar is absolutely worth adding to your culinary bucket list.

While in Washington, D.C., we also made time to visit Jaleo, Chef José Andrés' first restaurant. We stopped in for lunch and loved the lively atmosphere, flavorful tapas, and refreshing sangria. One of the things we appreciated most was how reasonably priced the menu was, making it an excellent option for experiencing José Andrés' cuisine in a more casual setting.

If we had to recommend a few must-order dishes, we'd definitely go back for the Gambas al Ajillo, Croquetas de Pollo, Gazpacho, and Patatas Bravas. To finish, don't skip the creamy Flan, and be sure to pair your meal with a glass (or pitcher) of the Sangria Cava. Jaleo was the perfect complement to our unforgettable evening at minibar and another reminder of why José Andrés is one of the world's most celebrated chefs.
